The article is devoted to the study of the quality indicators of fish of great importance caught from the inland water bodies of Azerbaijan by organoleptic and physicochemical methods. During the evaluation carried out by the organoleptic method, the appearance, taste, smell and consistency of the fish were determined. During the evaluation carried out by the physicochemical method, the mass composition of the fish, the amount of ammonia and the amount of fat were determined by the Nesler number.
