Abstract. The study of raw materials and functional food additives for the development of specialized  and  functional  food  products,  including  those  for  therapeutic  nutrition,  from unconventional and environmentally friendly plant sources is one of the key tasks for food service professionals and the food industry. In this context, the present research is highly relevant. This article presents data on certain morphological, technological, physicochemical, and functional properties of fresh leaves and dry powder from wild-growing Eremurus spectabilis of the Azerbaijani flora, which grows naturally in various regions of the republic. A literature review of scientific sources was conducted, as well as an analysis of the traditional and modern uses of the aerial parts of Eremurus, including its leaves, in both folk and official medicine. Justifications are proposed for the development of powdered additives from the leaves of wild Eremurus, which may be used in the creation of functional food products. The results of the study show that fresh leaves and powder from Eremurus are valuable sources of proteins, minerals, and other essential dietary components, as well as biologically active substances such as vitamin C and organic acids. It is shown that both the fresh leaves and the powder possess the necessary functional and technological properties for use in food products, including those of functional purpose. Morphological  and  physical  parameters  of  fresh  leaves  of  wild-growing  Eremurus spectabilis were studied, including mass, dimensions, weight loss during drying, as well as the content of protein, nitrogen, and minerals. In addition, a microbiological assessment of the powder and an analysis of its technological characteristics, such as hygroscopicity, moisture content, density, and water absorption, were conducted. The obtained data confirm the potential use of Eremurus powder in the production of powdered food products. Microbiological analysis confirms the safety of the powder for use in food products. The presence of valuable nutritional and biologically active components in a concentrated form after drying the wild Eremurus leaves, along with the significant seasonal raw material potential for its harvesting, makes it possible to recommend the fresh leaves and dry powder as a multifunctional food additive
