The article is devoted to the study of the quality indicators of the kulma fish, which has a special nutritional value among the fish of great importance caught in the Absheron Gulf, using organoleptic and physicochemical methods. During the organoleptic examination, the appearance, taste, smell and consistency of the kulma fish were determined. During the physicochemical examination, the mass composition of the fish, the amount of nitrogen-based volatile substances and oil were determined.
