The global increase in food waste is causing environmental, economic and social problems. The food industry plays a major role in waste generation and the implementation of effective management models in this area is of great importance. Reducing food waste and valuing end-of-life products within the framework of the zero waste principle and the circular economy concept requires innovative approaches . This thesis examines methods for reducing food waste and effectively using end-of-life products, emphasizing the role of the food industry in the transition to a circular economy. The zero waste principle aims to prevent waste generation and to eliminate existing waste as much as possible. In the food industry, this principle involves the application of waste reduction, reuse and recycling processes at every stage of the product life cycle. The causes of food waste are mainly due to improper storage, overproduction, problems in the supply chain and consumer habits. A zero-waste approach requires the effective management of each of these factors.
