The article is devoted to the organoleptic and physicochemical examination of quality indicators of commercially farmed fish in lakes and ponds of our republic.
During the evaluation conducted by the organoleptic method, the consistency, taste, smell and appearance of commercially farmed fish were determined. During the evaluation conducted by the physicochemical method, the mass composition of commercially farmed fish, the amount of nitrogen-based volatile substances, and the amount of ammonia, fat and lipids using the Nesler number were determined
